Githeri bean stew

A corn and bean one pot meal originating from the Kikuyu tribe of Kenya.

Ingredients

  • 1 onion, finely chopped
  • 2 cloves garlic, crushed
  • 1 tsp. curry powder
  • 1 tsp. smoked paprika
  • ½ tsp. chilli powder
  • 1 can red kidney beans, drained and rinsed
  • 1 can sweetcorn
  • ½ can chopped tomatoes
  • Salt and pepper to taste
  • 1 tbsp. oil
  • Coriander a few sprigs chopped
  • 300g rice

Method

  1. Heat the oil over a medium heat in a large saucepan and add the chopped onion. Fry for 5 minutes before adding the garlic, curry & chilli powder and paprika
  2. Stir well and then add the beans, sweetcorn, chopped pepper and tomatoes to the saucepan
  3. Add 1 cup of water 
  4. Season with salt & pepper then cover the pot and allow to cook for about 15mins
  5. Remove from heat and sprinkle over the chopped coriander.

This meal should cost you no more than £2.50. You can add other vegetables you have lying around in your fridge that need using up!
